Chocolate Walnut Zucchini Muffins

Chocolate Walnut Zucchini Muffins

Yields: 18 Muffins using 1/4 c batter


  • 1-1/4 c soymilk
  • 1 tbsp. lemon juice
  • 3/4 c brown sugar
  • 3 tbsp. water
  • 1 tbsp. flaxseed meal
  • 1 tsp. vanilla
  • 1/4 c cocoa powder
  • 1/4 tsp. salt
  • 1 c grated zucchini
  • 2 c all-purpose flour
  • 2 c all-purpose flour
  • 2 tbsp. baking powder
  • 1 oz. vegan (nondairy) chocolate - (chopped, grated) (alternatively use 2 tbsp. vegan chocolate chips)
  • 3/4 cup walnuts


  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together the soymilk, lemon juice, water and flaxseed meal. Stir in the vanilla and grated zucchini.
  3. In a large bowl, combine the flour, salt, cocoa, and baking powder, and mix together with a fork. Add your soymilk mixture to your flour mixture and stir until there are only a few small lumps in the batter. Fold in the walnuts and chocolate.
  4. Line your muffin pan with paper liners, or spray with nonstick cooking spray. Spoon out 1/4 cup batter for each muffin. Bake for 12-15 minutes. Let cool for 2-4 minutes before removing from pan and enjoying.
